Baked Cashew Cheesecake

This vegan Baked Cashew cheesecake is rich and delicious. The almond oat crust and the creamy cashew filling can be made in a blender. Once they are blended, bake to perfection. No gluten, no tofu or vegan cream cheese required!

You may have already heard that I have a thing to make vegan cheesecake. This is the perfect dessert, lighter than its dairy-rich counterpart and much easier to make. You can make dairy-free cheesecake in many ways, including with nuts, no nuts, vegan cream or no vegan cheese cheese.

This vegan Baked Cashew Cheesecake is everything you love in a classic cheesecake. The rich, creamy cashew filling tastes decadent and the almond oat crust adds a delicious crunch to each bite. This vegan dessert is easy to make in your blender.

No-bake cheesecake vs. baked cheesecake

Vegan cheesecakes can be baked or made without baking. They are rich and delicious desserts that are difficult to resist! Baking it in the oven makes it taste just like a good old-fashioned cheesecake.

Baked vegan cheesecake is made by baking a crust and then topping it with a filling. After the cake has been assembled, it is placed in the oven for another time. Then the cake is chilled and stored in the refrigerator until ready to serve. This makes a moist, light, and delicious cake.

While no-bake cheesecakes are easier to make, they're not as dense or fluffy. The crust is first placed in the pan, followed by the filling. Before the cake can be cut, it is placed in the refrigerator.

Ingredients required (with substitutions).

  • Raw almonds These are ground into crumbs for the crust. This recipe can be made with any type of nut, but I haven't tried it with other nuts. Macadamia nuts or walnuts could work, as well as more cashews.
  • Rolled oatmeal - To keep this dairy free cheesecake free from gluten, make sure to purchase certified gluten-free rolled oats. Quick oats can be substituted for rolled oats.
  • Salt
  • Maple syrup You will need real maple syrup to make the crust and fill the pie.
  • Coconut oil I haven’t tried it but melted vegan butter could work in place of coconut oil.
  • Raw cashews Soaked cashews can be transformed into a rich cream when blended. These are the bases of the dairy-free cheesecake filling. The mixture of cashew cream and blending cream will also firm up when it cools, making the filling perfect for storage in the refrigerator.
  • Coconut cream You can either buy canned coconut cream, or you can use the thick white portion in a full-fat coconut milk. Plain dairy-free yogurt is an option if you are allergic to coconut.
  • Lemon juice Freshly squeezed lemon juice enhances the rich filling.
  • Vanilla extract

How to make vegan baked cashew cheesecake

The complete recipe and measurements are below.

Begin by boiling the cashews. While you prepare the crust, let them sit for 20-30 minutes in boiling water.

Mix the almonds with the oats and salt until it becomes crumbly. Blend in the coconut oil and maple syrup until you get a dough. The crust is ready when the texture feels crumbly but not dry between your fingertips.

Place the almond crumble into your springform pan. It should be evenly pressed into the base.

Make the cashew filling while you wait. Blend the cashews with coconut cream, maple syrup and vanilla extract in a blender.

Blend until smooth.

Place the cheesecake filling in the prepared crust. Let cool. Bake the cake until the top is golden.

Not The cheesecake's middle will still look a little jiggly after it is out of the oven. Don't panic! It will become more firm as it cools.

After cooling for 30 minutes at room temperature, place the baked cashew cheesecake into the refrigerator. To chill the cake and set it, allow at least 6 hrs.

  • Chocolate ganache
  • Fresh fruit and vegan whip cream
  • Mint leaves and lemon zest

Success tips

  • You can test the almond oat crust by pinching it between your fingers to see if it is ready. The almond oat crust should be firm but not too crumbly.
  • If the crust seems too dry, add a little maple syrup or coconut butter to make it more pliable.
  • Let the cheesecake cool in the refrigerator for 30 minutes after it comes out of the oven. You can then transfer the cheesecake to the refrigerator to set it for at least 6 hours, or even overnight.
  • For the best cheesecake slices, use a sharp knife and hot water. After each slice, wipe it clean and then go back.
  • This dairy-free baked cheesecake is made even more special by the addition of nuts. You can also make my Vegan Cheesecake if you don't want to eat nuts.

Can this vegan cheesecake be made gluten-free?

Yes! But not all rolled oatmeal is naturally gluten-free. To ensure that your oats meet gluten-free standards, make sure you check the packaging.

I don't own a springform pan. What can I do?

You can bake the crust or the cheesecake in a 9-inch round pan or pie plate.

How long will it last?

Cheesecake and slices will keep for approximately 4 to 5 days if kept in the refrigerator.

Can you freeze vegan cheesecake?

Although I haven’t tried it yet, the cake should freeze well. Before freezing, wrap the slices or cake in aluminum foil and then a layer of plastic.

Ingredients

Oat-Almond Crust

  • 3/4 cup raw almonds
  • 3/4 cup rolled oats
  • 1/4 teaspoon salt
  • 2 tablespoons pure maple syrup
  • 3 tablespoons coconut oil, melted

Cheesecake filling

  • 1 1/2 cups raw cashews
  • 1 1/2 cups coconut cream OR dairy free yogurt
  • 1/2 cup pure maple syrup
  • 1 large lemon, juiced (3 tablespoons)
  • 1 teaspoon pure vanilla extract

Instructions

  • Boil the cashews in water for 4 cups. Let the cashews soak in the hot water for 20-30 minutes.
  • Preparing pan and oven. - Preheat oven to 350°F. Cover a 9-inch springform pan with aluminum foil in 1-2 layers, covering both the bottom and sides. Spray oil lightly on the bottom of the pan by cutting a circle from parchment paper.
  • Make the crust while you wait. Place the almonds, oats, and salt in a high-powered blender or food processor and blend/pulse until the mixture looks like crumbs. Blend the maple syrup and coconut oil until smooth. Continue to pulse until you get a dough. The dough should feel soft and not crumbly. You can add more maple syrup or coconut oils to make it even more moist. Place the pan on a flat surface and press down firmly. Bake for 15 minutes, or until lightly golden. Take out of the oven and let cool in a bowl.
  • Make the cheesecake filling. Drain the cashews from the soaking water. Blend the coconut cream, dairy-free yogurt, maple syrup and vanilla extract in a blender. Blend until smooth.
  • Bake the cheesecake. The cheesecake batter will remain slightly jiggly, but it will become firmer as it cools.
  • Chill the cheesecake before serving. Let it cool at room temperature for 30 minutes, then transfer it to the fridge for at least 6-8 hours, or overnight.
  • Serve - After the cheesecake has chilled, cut it into slices and serve. You can top it with vegan salted caramel, strawberry sauce, chocolate ganache, fresh fruit, or vegan whipped cream.
